Ingredients Needed For Making Nigerian Buns:

4 Cups of All-purpose Flour

3/4 Cup of Sugar (adjust as preferred)

2 Tsp of Baking powder

1/2 Tsp of Grated/Ground Nutmeg

1/2 Tsp of Salt

2 Eggs

1/4 Cup of Butter

2 1/2 Cups of low-fat Milk or Water (Adjust liquid to fit preferred crunch. More liquid = less crunch.)

Instructions Needed For Making Nigerian Buns:

Gather all utensils and ingredients needed for making Nigerian Buns for your convenience.

Sift the flour into a large mixing bowl or the dough mixer. Add the sugar, baking powder, nutmeg, and salt. Create a well in the center of the dry mix. In a separate bowl, whisk the eggs. Pour the whisked eggs into the well in the dry mix. Add the melted butter. Add the milk or water gradually till you get the right consistency. Mix until you form a thick sticky dough.

Work the batter until it becomes smooth and elastic. Cover the bowl of dough with a cling film or clean kitchen towel and set aside.

Thin a very generous amount of cooking oil in the deep frying pan or pot on medium heat. Set a bowl of cold water aside to dip your hands in at intervals when scooping the dough into hot oil. You would do well to make sure that the cooking oil is hot but not smoking.

Pinch off small portions of the dough and roll them into balls or oval shapes. Ensure they are of uniform size for even frying. Carefully place the round scoops of dough into the hot oil, frying until each side turns golden brown. Repeat until the surface of the oil is filled with balls of dough (with adequate spacing). Turn as frequently as necessary to avoid burning.

When each set of Nigerian Buns is done frying, use the slotted scoop to lift and drain them from the oil and transfer the Nigerian Buns into a paper towel-lined colander.  Repeat the process until the dough is exhausted. Allow them to cool slightly before serving.
