This recipe will get you compliments from whoever is lucky enough to taste it.

Snacks like Sausage Rolls, meat pies, and scotch eggs have been popular amongst Nigerians for some decades. We have always had the option of buying these delicious snacks from either the relatively more expensive fast food restaurants or from street vendors that sell packaged sausages like Gala* in traffic.

Gala was the top-selling brand of Sausage Roll because of its peculiarly delicious taste and the generous beef filling. Being readily accessible and relatively affordable helped its popularity too. When we happen to buy these branded Sausage Rolls from street vendors, most of us would pair it with a sugary-tasting apple-flavored drink called LaCasera. It was as though we all quietly agreed that that was the ultimate nationally accepted snack pairing.

In more recent years, many individuals have been bold enough to start to make these snacks in the comfort of their own homes. And, as we all know, practice makes perfect. Here is one truly delicious Sausage Roll Recipe that we have practiced to perfection. We hope you enjoy it.

Onion Powder (To Taste)

Salt (To Taste)

Cooking Oil

2 Tbsp Flour (As Thickner)

Instruction For Making The Dough:

In a large bowl, sift the flour as it helps make the dough fluffy. Add half a teaspoon of nutmeg. Add the teaspoons of baking powder. Add salt to taste. Bear in mind that you need to reduce the quantity of salt if you are using salted butter. Mix the dry ingredients. Break and mix the butter in. Add the eggs and continue to mix the contents of the bowl. You can either use water, milk, or both in this recipe.

We prefer to use both as milk helps the dough absorb water better. This mixture of milk and water in the dough gives you a softer and smoother dough and a creamier taste. Adding milk is also a way to incorporate its nutrients into your recipe.

Continue to mix your dough. You will know you have the right consistency when the dough is soft but not sticky. Once that is achieved, cover the dough with film and put it in the fridge. Letting the dough sit in the fridge allows it to hydrate which results in a tender but firmer dough that doesn’t break apart.

Instructions For Making The Filling:

If you choose to use beef, you have the option of buying minced meat or going our way and mincing your own meat with onions in your blender at home. Mincing your meat at home gives you the comfort of knowing exactly what goes into your minced meat.

If you choose to use sausages, peel the casings of the sausages and put the meaty part into a bowl.

Heat about two tablespoons of cooking oil in a pan on low heat. Add the minced beef or sausages to the hot oil and stir fry. Season to taste. If you choose to use sausages, do not add salt to your stir fry, and add much less bouillon and onion powder than you would to minced meat. We typically add a bit of cayenne pepper to tickle our taste buds, you don’t have to. Add flour as a thickener to the beef or sausage stir fry and mix. When your stir fry is cooked, turn off the stove and let it cool.

It’s time to roll the sausages. Set your rolling board and rolling pin on a level surface. Place the parchment paper on the baking tray. Grab your bowl of dough from the fridge. Cut out a handful of dough, set it on your rolling board, and roll till it’s flat. Cut out a big square, take the dough around the edges of the square, and put it back with the dough in the bowl.  Place the beef or sausage vertically on one end of the dough and roll horizontally. Brush egg wash on the edge of the roll to seal it. Place the sausage roll on the parchment paper in the baking tray.

Repeat the process until you are done rolling the sausages. Preheat your oven to 350°. Brush eggwash across the surface of the rolls for a polished finish. Place the tray of sausage rolls in the preheated oven. Let the sausage rolls bake at 350° for 30 minutes.

After 30 minutes, take your tray of Sausage Rolls out of the oven. You have just made yourself a tasty treat! Enjoy!
