Gbegiri Soup is a part of a popular dish called Abula. Abula is the main dish of the people of Ibadan, Oyo state of the southwestern part of Nigeria. Because of the deliciousness of this dish, it has gained popularity amongst other Yoruba states too. Gbegiri is rich in flavors, colorful, velvety, and truly delicious. The main ingredient is peeled beans, the end product is mouth-watering.
The full dish, Abula, consists of amala, gbegiri, ewedu, and ata dindin. Amala is made from yam flour turned in boiling water with a wooden spatula until it becomes a thick, starchy consistency.
Gbegiri Soup is made by cooking peeled beans or black-eyed peas (I personally prefer peeled honey beans as it gives it a slightly sweet taste and aroma that gets the cook compliments), blending the cooked beans, and adding all other ingredients listed below at the right intervals in order to make this delicious soup.
Ewedu is the Yoruba word for jute leaves, it is made by cooking jute leaves in some water till it boils and simmers for about 3 minutes (Note: Leave ewedu uncovered till it cools to retain its slight slime), add salt to taste.
Ata Dindin is the local Yoruba (Nigeria) restaurant-style fried stew, also known as Buka stew. It is made by frying blended bell peppers, tomatoes, tomato paste, scotch bonnet (rodo), onions, garlic, and ginger in your choice of oil. It is seasoned to taste with bouillon powder, salt, curry, thyme, beef or chicken stock, and filled with choice meats. Abula is now popularly served at affluent Nigerian parties, choice Nigerian traditional restaurants, and in the comfort of Abula lovers’ homes.
